The Best Fresh Homemade Lemonade with Mint!

If you’ve been making fake or powdered lemonade, stop. It tastes gross. With just a few ingredients, you can easily make real lemonade that everyone will love.

And, with our super juice recipe, you can make a half gallon of lemonade with only one lemon! It’s like lemon concentrate only fresh and delicious. This is an all-natural, no-waste, cost-effective method of using the whole fruit. 

This simple recipe can be made by anyone, even the kiddos.

Here’s the secret. To make the lemonade, you first need to make lemon super juice. All you need is:

Karen’s Simplified Lemon Super Juice 

One lemon makes about 1 ounce of juice. Or you can use our recipe to turn one lemon into 9 ounces of super juice! The super juice has the same acid content but an oil content that is 3-4 times more potent than what you would get with hand-squeezed juice. In other words, more flavorful.

  1. Lemon should be at room temperature. Roll to release juice. Wash, then peel the fruit. 
  2. Put peels in a pint Mason jar with citric acid. Shake well and leave for one hour. 
  3. After one hour, juice the fruit into the jar or blender. Empty the peels and acid into the blender and use the water to rinse the jar into the blender. Blend on high for one minute. 
  4. Strain through a fine mesh strainer into a Mason jar.
  5. Cap the jar and refrigerate. Label the jar with washi tape.
How to make lemon super juice

Now it’s time to make the lemon mint ice cubes. I prefer to put these in lemonade instead of regular ice cubes so the drink doesn’t lose its flavor as the ice melts.

Begin by using scissors to cut the top leaves of mint (TIP: count 3 rows of leaves from the bottom, then cut the top). Gather your supplies:

  1. Fill an ice cube tray or jars with mint.
  2. Shake together juice and water. Pour into an ice cube tray or freezer-safe jars with mint. TIP: If using jars, keep 1/2 inch space at the top to allow for expansion when the liquid freezes.
  3. Cap with freezer-safe reCAP Mason jar caps or reuse sauce caps or canning lids.
  4. Freeze until solid. Then loosen by running hot water around the jar.

Ingredients | 1 Quart | ½ Gallon | 1 Gallon

  • Lemon Super Juice | ½ cup | 1 cup | 2 cups
  • Honey or sugar | ½ cup | 1 cup | 2 cups
  • Water | 3 cups | 6 cups | 12 cups

Instructions

  1. Put the honey or sugar in a measuring cup and add one cup of hot water to dissolve.
  2. Then pour into a Mason jar with lemon juice and the remaining cold water.
  3. Refrigerate.
