With a single container and reusable Mason jar lid, you can shake out parmesan today and strain savory au jus tomorrow. “But wait, there's more.” Whatever remains doesn't even need to be transferred to another container. Mason jars store easily in the fridge, have a small footprint, maintain greater freshness over plastic, and can be heated without the worry of leaching chemicals. Less gadgets; less clean-up. Most of us can agree that unorganized, over-cluttered cabinets and drawers are frustrating and wasteful.

Au Jus Roast

Ingredients

  • 1 - 3 lb. pound(s) eye of round roast
  • 1 large white onion, chopped
  • 2 tablespoon(s) olive oil

Instructions

  1. Cook as directed.

The Marinade

Ingredients

  • 1/2 cup(s) soy sauce
  • 2 teaspoon(s) whole grain Dijon mustard
  • 1/2 cup(s) red wine vinegar
  • 1/4 cup(s) light brown sugar
  • 1 teaspoon(s) meat tenderizer
  • 1 teaspoon(s) garlic powder
  • 1/2 teaspoon(s) freshly ground black pepper
  • 1/4 teaspoon(s) crushed red pepper (optional – add for spicy heat)
  • 6 bay leaves

Instructions

  1. Add all of the marinade ingredients to a Mason jar. Add a reCAP and shake vigorously until well mixed. Place eye of round roast into a Dutch oven with 2 tablespoons olive oil. Sear all sides until lightly browned. Pour marinade mixture over and allow to sit for 1 hour in the refrigerator (turning after 30 minutes).
  2. Remove from refrigerator and place the roast on a plate. Pour the mixture back into the Mason jar. Return the roast to the Dutch oven, and add one large onion, chopped into large pieces. Pour the mixture over the roast and onions, straining the leaves and any clumps. Bake at 350 F for 1-2 hours. Refer to a temperature guide to determine the best internal temperature for your beef roast.
