This crunchy and garlicky marinade is so cool and refreshing. It pairs easily with everything. It’s also inexpensive to make, so perfect for big party batches or bringing to potlucks, picnics, and barbecues. 

Choosing Cucumbers

Back in Taiwan, they used Taiwanese cucumbers. They are available in Chinese markets these days, but you can improvise with kirby cucumbers (but you have to find small and slim ones.) You can sometimes use Korean cucumbers or Persian cucumbers. You want to use slim, seedless cucumbers. 

Each type of cucumber will be a little different! Have fun and experiment.

Taiwanese Simple Cucumber Marinade

Ingredients

  • 1 teaspoon(s) Asian roasted sesame oil
  • 1.2 teaspoon(s) granulated salt

Instructions

  1. Thinly slice mini cucumbers (4-6 for the above recipe).
  2. Add to a jar with marinade ingredients.
  3. Shake and enjoy! Best served cold and enjoyed within 3 days.
