This homemade cooked carrots recipe makes the perfect side dish for a weeknight family dinner or holiday roast. This preparation is a great alternative to maple carrots: less sweet, more dimensional, and so very handsome sidled up to a pot roast or a mound of buttery mashed potatoes.

The earthy sweetness of the carrots in this recipe is balanced by the salty sharpness of capers. Garlic and parsley bring the dish together but keep a relatively low profile. This preparation is a great alternative to maple carrots: less sweet, more dimensional, and so very handsome sidled up to a pot roast or a mound of buttery mashed potatoes. But you needn't wait for a big occasion. Try these cooked carrots once and you'll likely add them to your root repertoire all year-round. Let's get cooking!

Cooked Carrots

Ingredients

  • 1 pound(s) young carrots, peeled
  • 1 medium garlic clove, finely minced
  • 2 tablespoon(s) parsley, chopped
  • 2 tablespoon(s) capers, drained
  • 3 tablespoon(s) olive oil
  • 1/2 teaspoon(s) salt

Instructions

  1. Choose carrots that are about the diameter of your little finger. If only larger carrots are available, cut them lengthwise into halves or quarters about 3/4" thick and 3-4" long.
  2. Place a correctly sized Frywall into position, add the oil and garlic, and to set heat to medium-high.
  3. Stirring occasionally, cook the garlic until it becomes aromatic and turns a pale yellow.
  4. Add the carrots and parsley and stir until evenly coated in oil. Arrange the carrots so they lie flat in a single layer. Pour in 1/4 cup of water and continue cooking on medium high. Stir occasionally, adding 1/4 cup water whenever the liquid evaporates.
  5. Periodically test for doneness by poking a carrot with a fork. The carrots should be slightly tender but not mushy. This will take 20-30 minutes of cooking time, depending on the thickness and freshness of your carrots. Turn the heat to high to cook off any remaining liquid.
  6. Add the capers and a couple of grinds of pepper and cook for another minute. Salt to taste. (The exact salt requirement will depend on the saltiness of your capers). Serve as quickly as possible.
  7. Bon app├ętit!
